This review summarizes the multifaceted aspects of antioxidants and the basic kinetic models of inhibited autoxidation and analyzes the chemical principles of antioxidant capacity assays. Depending upon the reactions involved, these assays can roughly be classified into two types: assays based on hydrogen atom transfer (HAT) reactions and assays based on electron transfer (ET).
Antioxidant capacity and major phenolic compounds
In this work, the commonly consumed spices in China were found to have high levels of antioxidant capacity and total phenolic compounds. Moreover, the antioxidant capacity, total phenolic content and major phenolic compounds of the 19 selected spice extracts were different from each other.
2.3. Total antioxidant capacity. Total antioxidant capacity was assayed using the improved ABTS method (Cai et al., 2004).The ABTS∙ + radical cation was generated by reacting 7 mmol/L ABTS and 2.45 mmol/L potassium persulfate after incubation at room temperature in darkness for 16 h. The ABTS∙ + solution was diluted with 80% ethanol to an absorbance of 0.700±0.005 at 734 nm.
